The lovely golden colour of this millet four is ideal for making attractive-looking cakes and biscuits. Millet flour also has a subtle flavour that will not overpower sweet baking.

This flour is often used in combination with rice flour and other wheat free flours to provide extra protein and fibre.

Directions

  1. Millet flour can be mixed with other flours including rice flour and tapioca flour, to make a great wheat-free bread flour blend.

  2. Use millet flour to make flatbreads. The bajra roti is similar to a chapati, but made with millet flour. Simply mix millet flour with water to make a dough. Roll into balls, then flatten each ball with a rolling pin to form a thin roti (about 3mm thick). Heat a frying pan and add a very thin layer of coconut oil before cooking each side for 2 minutes.
